Make Cucumber, Garlic and Yogurt Sauce

1 medium cucumber
7oz ( 200g ) plain Greek yogurt
2 garlic cloves
1 tbsp olive oil
salt, pepper and paprika
1 tsp white wine vinegar (optional)

Step 1: Cut cucumber in half lengthwise, use a spoon to scrape out the seeds (discard these) then grate it.

Step 2: Place the rest of the ingredients in a bowl. Mix and serve.
